Ingredients
- 1 cup lentils
- 1 lg.lemon zested and juiced
- 2-3 T. olive oil
- splash red vinegar
- 2 carrots diced
- 2 stalks celery diced
- kalamata olives
- 1/2 cuke
- 4 oz. crumbled feta
- optional tomatoes diced

Preparation
Step 1
1, Cover lentils with 3 cups cold water cover pan cook 10 min,
2, turn heat off let sit a few min until liquid is absorbed
3, drain lentils well and put in lg. glass bowl add lemon zest, juice,olive oil, salt and pepper, carrots and celery stir to blend and put in frig. about 1/2 hr.
4, take out of frig. add tomatoes olives and feta cheese stir to blend adjust salt and pepper to taste.
