All-purpose Vinaigrette Dressing

Dijon mustard not only flavors this classic French oil-and-vinegar dressing but also gives it body, so that it clings to every leaf of a green salad. For a more assertive taste, substitute a clove of minced or pressed garlic for the shallot.

Ingredients

  • 1 tbsp Dijon mustard
  • 1 tbsp minced shallot or red onion
  • 3 tbsp wine vinegar
  • 1/2 cup olive oil or salad oil

Preparation

Step 1

In a small bowl, combine mustard, shallot, vinegar, and oil; mix until well-blended. If made ahead, cover and refrigerate for up to 2 weeks. Shake well before serving.
