Ingredients
- 2 cloves minced garlic
- 2 med onions chopped
- 2/3 cup oil (I use 1/3)
- 1 green pepper diced
- 1 lb or 1 large eggplant diced and peeled
- 1 lb zucchini diced (can use more)
- 1 lb canned or fresh tomatoes diced
- (drain off some juice)
- 1/2 tsp basil
- 3/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp lemon juice
- 1/2 tsp rosemary

Preparation
Step 1
Saute garlic and onion in oil-add rest of ingredients, cover and cook 45 minutes, stirring occasionally

pour into casserole uncovered and cover with mixture of 1 cup bread crumbs, 1/4 cup grated parmesan cheese, 3/4 tsp garlic powered
Place in oven till browned
