1. Preheat oven to 355 degrees. 2. Remove skin from chicken, rinse chicken and pat dry. 3. Peel potatoes and cut into quarters, lengthwise. 4. Salt and pepper chicken and potatoes. 5. Transfer chicken to a roasting pan, add potatoes on and around chicken. 6. Add oregano, garlic, olive oil and lemon juice, distributing evenly across the pan. 7. Add water and roast uncovered for a total of 1 hour and 40 minutes, turning chicken after 50 minutes.
