CHICKEN & BEEF KABOBS

Ingredients

  • Creamy Salsa Verde:
  • 1 cup olive oil
  • 2/3 cup lime juice
  • 1/2 cup red wine vinegar
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 4 cloves garlic crushed
  • 6 chicken breast halves skinned and boned and cut into 1-1/2" strips
  • 3 lbs. boneless sirloin roast cut into 1-1/2" cubes
  • 2 green peppers cut into 1" pieces
  • 2 sweet red peppers cut into 1" pieces
  • Creamy salsa verde
  • Ancho chili sauce
  • 9 cherry tomatoes
  • 1 small clove garlic
  • 1 jalapeno pepper, stem removed
  • 2 tablespoons chopped green onion
  • 1 tablespoon white wine vinegar
  • 1 tablespoons lime juice
  • 1/4 teaspoon salt
  • 1/2 cup commercial sour cream
  • 1/2 cup mayonnaise
  • Chopped green onions
  • Ancho Chili Sauce:
  • 4 dried ancho chiles, stems removed
  • 2 cups water
  • 2 tablespoons chicken flavored boullion granules
  • 2 tablespoons butter or margarine
  • 2 tablespoons all purpose flour
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried whole oregano
  • 2 cloves garlic minced

Preparation

Step 1

Combine first 9 ingredients and pour over chicken and beef. Cover and marinate 2 to 4 hours in refrigerator. Remove chicken and beef from marinade. Alternate chicken, beef and peppers on skewers. Place skewers on a broiler pan 6" from heat and broil for 7 minutes on each side or to desired degree of doneness. Serve with creamy salsa verde and ancho chile sauce. 12 servings.

Cream Salsa Verde:

Position knife blade in food processor bowl, add cherry tomatoes and next 6 ingredients. Top with cover, and process until smooth. Stir in sour cream and mayonnaise, cover and chill. Spoon into serving dish and sprinkle with chopped green onions.

Ancho Chile Sauce:

Combine chiles and water, and bullion granules in saucepan. Bring to a boil, reduce heat and simmer 20 minutes. Cool. Pour mixture into container of blender, and process until smooth. Set aside. Melt butter in saucepan over low heat, add flour, stirring until smooth. Cook the mixture for 1 minute, stirring constantly. Gradually stir in chile mixture and cook 5 minutes, stirring constantly. Stir in seasoning.
