Toasted Sesame Mayonnaise

Distinctively flavored with sesame and soy, this golden mayonnaise can be served as a dip for cold cooked asparagus spears or as a spread for roast beef sandwiches.

Ingredients

  • 2 tbsp sesame seeds
  • 1 cup salad oil
  • 1 large egg
  • 1 clove garlic
  • 2 tbsp white wine vinegar
  • 1 tsp honey
  • 1 tbsp soy sauce
  • Salt (optional)

Preparation

Step 1

Toast seeds in 1/4 cup of the oil in a small frying pan over medium-low heat, stirring, until seeds are golden (3 to 5 minutes). Remove from heat, add remaining 3/4 cup oil, and let come to room temperature.

In a blender or food processor, combine egg, garlic, vinegar and honey. Whirl until well blended. With motor running, add oil mixture, a few drops at a time at first, then increasing to a slow, steady stream about 1/16 inch wide. Stir in soy sauce and, if desired, season with salt to taste. If made ahead, cover and refrigerate for up to 2 days.
