Ingredients
- 1 3 1/2- to 4-pound chicken, cut into 8 pieces
- 1 yellow onion, cut into 1-inch wedges
- 2 small sweet potatoes, peeled and cut into 1-inch chunks
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3 tablespoons maple syrup
- 6 sprigs fresh thyme
Preparation
Step 1
Heat oven to 400° F.
Rinse the chicken and pat it dry. Arrange the chicken, onion, and sweet potatoes in a 9-by-13-inch baking dish. Drizzle the oil over the chicken and vegetables and season with the salt and pepper. Toss to coat. Drizzle with the maple syrup and top with the sprigs of thyme.
Roast, stirring the vegetables once, until the chicken is cooked through, about 1 hour, 15 minutes. Let rest for 10 minutes before serving.

This is one of my favorite favorite "no brainer" meals - I adjusted up the sweet potatoes and onions because we all love vegetables and the original recipe doesn't include enough for 4 hungry people. Delicious.
So so so so soo good! Definitely added more maple syrup and served with Sweet Potatoes w/Pecans and Parmesan and Broiled Asparagus. Delicious!
This was GREAT! I used split chicken breasts and cooked for a little less time. Served it w/ Deviled Brussel Sprouts as a side and fresh multi grain artisan bread. The meal was a big hit! Quick, easy and delicious!
Very good. I used 4 boneless chicken breasts and did increase the maple syrup and honey. Will be a new go to recipe.
I use chicken thighs and double the syrup and add much more pepper and it is a family favorite.
I made this a few weeks ago and found that the sweet potatoes were a little dry. I added more maple syrup and oil than the recipe called for, but it was still kind of dry. Any suggestions?
I used regular boneless skinless breasts, because that's what I had in my freezer, and it was absolutely delicious!
This was very good but I made a few tweaks. I used some lemon juice and lemon rind and a little butter in the maple syrup. I also used 1'2 syrup and 1/2 honey which worked well. I reserved some of the liquid and cooked the chicken for 30 minutes covered, tossed the veg and then brushed the chicken with the remaining sauce and cooked another 30 minutes uncovered. It was fantastic!
Do you think it would taste ok with honey instead of maple syrup??
I made this Saturday night for my husband and I. It was sooo easy, and delicious!!! If you are counting calories... add up your own calories per serving (mine added up to 350 not 652!, using the nutrition labels of the ingredients). This would definitely be a wonderful slow cooker recipe as well! This is already a household favorite!
