Ingredients
- 1/4 cup dry-packed sun-dried tomatoes, finely chopped
- 4 cups loosely packed basil leaves, coarsely chopped
- 3/4 cup shredded stravecchio cheese
- 2 doves garlic, thinly sliced
- 1 sirloin steak, 2" thick (about 3 1/4 lbs.)
- 1 tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
Preparation
Step 1
Bring 2 cups water to a boil. Remove from heat; add sun- dried tomatoes. Let stand 10 minutes, then drain. Mean-while, heat grill to low for direct heat or position broiler rack 6"-8" from heat source and heat broiler. In bowl, combine basil, cheese and garlic. To stuff steak, see box, right. Brush steak with oil, then sprinkle with salt and pepper. Grill or broil 35 minutes, turning once, or until thermometer inserted into meat, not touching stuffing, registers 140 degrees F for medium-rare.
