Banana Bread Muffins

  • 1 1/4 cups sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 1/2 cups mashed very ripe bananas (3 to 4 medium)
  • 1/2 cup buttermilk or whole milk
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • brown sugar for topping
  • muffin cups

Step 1

Heat oven to 350 degrees.

In a large bowl, mix sugar and butter. Add eggs, bananas, buttermilk and vanilla; beat with electric mixer on medium speed until smooth. Stir in flour, baking soda and salt until just moistened. Pour batter into muffin cups and sprinkle brown sugar over top.

Bake 20 minutes or until toothpick inserted in center comes out clean.
