Ingredients
- 1 pkg (14 oz) sweetened shredded coconut or 5 1/3 cups
- 1 cup sugar
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1/2 cup chilled unsalted butter cut into small cubes
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups all purpose flour

Preparation
Step 1
preheat oven 350
set aside 2 cups coconut
place remaining coconut in food processor with sugar, salt baking powder. Puree until finely ground add butter and process until smooth
add flour, pulse until a crumbly dough begins to form.
Form into balls and roll in reserved coconut.
Place ball 2 inches apart on baking sheet
bake until lightly golden for 23-25 mins
