Ingredients
- 1 cup butter or margarine, softened
- 1/2 cup sifted powdered sugar
- 1 teaspoon grated orange rind
- 1 teaspoon orange extract
- 2 cups all purpose flour
- 6 ounce chocolate flavored candy coating
- 1/2 cup finely chopped toasted almonds
Preparation
Step 1
Cream butter, gradually add sugar, beating until light and fluffy. Stir in orange rind and extract. Gradually add flour to butter mixture, mix well. Shape dough into 2-1/2" x 1/2" logs. Place on ungreased cookie sheet. Flatten thee quarters of each cookie lengthwise with a fork to 1/4" thickness. Bake at 350 degrees for 12-14 minutes. Transfer to wire racks. Let cool completely.
Place chocolate coating in top of double boiler, bring water to a boil. Reduce heat to low, cook until coating melts, stirring occasionally. Remove double boiler from heat, leaving coating over hot water. Dip unflattened tops of cookies in melted chocolate to coat both sides, roll coated portion in almonds. Place cookies on wire racks until coating is firm. Arrange cookies between layers of wax paper in an airtight container, store in a cool place. Makes 4 dozen.
