Ingredients

  • Salad

  • 2

    hearts of romaine, chopped

  • 1

    bell pepper, chopped

  • ¼

    red onion, thinly sliced

  • ½

    can of chickpeas (garbanzo beans)

  • ¼

    cup pepperocini peppers

  • ¼

    cup kalamata olives, sliced in half

  • ½

    cup of cherry tomatoes

  • ½

    cucumber, chopped

  • ¼

    cup feta cheese, crumbled

  • Dressing

  • 2

    tsp. dried oregano

  • ½

    cup lemon juice

  • ¼

    cup extra virgin olive oil

  • 1

    garlic clove, minced

  • Salt and pepper

Directions

Dressing Combine your garlic, oregano, and lemon juice in a small bowl. Slowly whisk in the olive oil and season with salt and pepper. Set aside until you are ready to use. Salad Once you have all of the ingredients chopped up this salad is pretty much assembly only. Place your romaine in a large bowl or serving dish and top with veggies and feta cheese. Drizzle your salad dressing over the top right before you are ready to eat and enjoy!!
