Ingredients
- 4 boneless pork chops or pork steaks
- 3 slices day old bread
- 1 egg
- 2 T olive oil
- 1/4 C honey
- 2 T spicy brown mustard
- 2 T cider vinegar
- 2 apples cored and sliced
- 6 C baby spinach
- salt and pepper

Preparation
Step 1
flatten chops to 1/2" thickness. using a food processor or magic bullet
process bread to crumbs. Beat the egg and add salt and pepper. Dip each chop into the egg mixture then coat with the bread crumbs. Heat the oil and sear the pork about 4 minutes on each side until no longer pink inside. remove pork from skillet and stir in honey, mustard, and vinegar in the skillet loosening any flour and meat bits remaining in skillet. Add the apples and cook 3 minutes until tender crisp. toss in the spinach and salt to taste.. pour gravy mixture over chops and serve.
