Ingredients

  • 12 red jalapeno chiles, seeds, veins and tops removed
  • 1/2 c. olive oil
  • 1/4 c. white vinegar
  • 7 T. feta cheese
  • 1 T cream cheese

Preparation

Step 1

1. Place the cleaned peppers in a jar or bowl and cover them with the olive oil and vinegar.

2. Cover and place in the fridge for at least 4 hours or overnight.

3. Preheat oven to 350 degrees.

4. Drain the peppers and place them on a cookie sheet in a single layer.

5. Bake for 10 minutes or only long enough to soften them - do not let them brown. Cool and set aside.

6. Mix together the feta and cream cheese.

7. Fill each pepper with the cream cheese mixture.

8. Serve as an appetizer or a side dish with any meal.
