  • 1 (16 oz.) jar roasted red bell peppers, drained
  • 3 cloves garlic, minced
  • 3/4 cup chopped fresh basil
  • 3/4 cup freshlt grated Parmesan cheese
  • 1/3 cup extra-virgin olive oil
  • 1 tsp balsamic vinegar
  • 1/8 tsp salt
  • 1/8 tsp pepper

Step 1

1. In a blender or food processor, puree peppers, garlic, basil and Parmesan cheese until smooth.

2. With motor running, slowly drizzle in olive oil, then add vinegar, salt and pepper.
