Brunch Tater Tot Egg Casserole with Sausage & Cheddar

Ingredients

  • 1 32 oz bag of frozen tater tots
  • 8 large eggs
  • 1 cup 1/2 & 1/2
  • 3/4 cup Parmesan/Romano cheese, grated
  • 1 lb breakfast sausage from a tube
  • 1 red bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped
  • 2 tsp fennel seeds
  • 1 tsp kosher salt
  • 1 tsp course ground pepper
  • 2 cups sharp cheddar cheese
  • 2 tbsp cut chives

  • 2 cups sharp cheddar cheese
  • 2 tbsp cut chives

Instructions

Preheat oven to 350 degrees F

Place the bag of tater tots in a well buttered 13X9 baking dish or 12 individual baking cups, set aside

Scramble the eggs, half & half and parmesan cheese and set aside

In a large skillet over medium/high heat, add the sausage, bell pepper, onion, garlic, fennel seeds, salt and pepper and sauté for 10 minutes, breaking up the sausage and stirring occasionally until brown and crumbly and pour over the tater tots in the baking dish or cups
Pour the scrambled egg mixture over the top of the tots
Sprinkle cheese on top and place in oven for 30 to 40 minutes or until golden
Garnish with cut chives or parsley and serve right away.
