I've been eating this dish for 23 years at a favorite breakfast restaurant, and it JUST occurred to me to make it at home! It's absolute perfection to me.

Ingredients

  • 5 5 5 slices cooked bacon
  • 1 1 1 tomato, diced
  • 3 3 3 cups chopped spinach or arugula
  • 2 2 2 Tbs bacon fat (or butter,) divided
  • 4 4 4 eggs, beaten
  • Black pepper
  • Shredded sharp cheddar, or any favorite cheese
  • Sour cream

Preparation

Step 1

In ovenproof skillet, saute the tomato in 1 Tbs of fat until slightly softened. Add in the greens and saute until wilted. Add in half the bacon, cook for 2 minutes, then add in the beaten eggs. Grind some black pepper on the top (no salt is needed because of the saltiness of both the bacon and the cheese.)

While the eggs are cooking, preheat the broiler to high. Once the eggs start to set on the sides of the pan, move it the the oven. Check frequently and take out once the eggs are almost set. Sprinkle all over with cheese and top with the rest of the bacon. Broil until the cheese is melted.

Serve with a dollop of sour cream.
