Ingredients

  • 1 pd boneless chicken breast cubed
  • 2 tbsp flour
  • salt and pepper
  • 2 tbsp olive oil
  • 1 red onion
  • 2 large carrots
  • 1 red bell pepper
  • 1 small jalapeno pepper
  • 5 cups chicken broth
  • 3 tbsp chopped cilantro fresh
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup frozen corn kernals
  • 4 soft corn tortilas

Preparation

Step 1

Toss the cubed chicken breast in flour that has been generously seasoned with salt and pepper, until pieces are lightly coated

With the lid off , heat oil on high or brown till sizzling

Place the coated chicken in cooker and saute until lightly browned, about 5 minutes

Add the onion, carrots, bell pepper, and jalapeno pepper and stir well, sauteing 1 additional minute

Add the chicken stock, cilantro, cumin, salt and pepper to the chicken mixture. lock the lid of pressure cooker, set on high and cook for 7 minutes

Perform quick release to release cookers pressure. Stir in the corn kernals and tortilla strips before serving
