Ingredients

  • 1 T vegetable oil
  • 1/2 t smoked paprika
  • salt and pepper
  • 4 pork chops (bone in)
  • 2 small red onions sliced
  • 2 C + 5 t water
  • 2 carrots sliced
  • 8 oz green beans
  • 1 1/2 C rice
  • 1 lemon thinly sliced
  • 1/2 C bbq sauce

Preparation

Step 1

In oven proof skillet heat oil. Season pork with paprika, salt and pepper. Add to skillet and cook chops for 4-5 minutes each side. Transfer chops to platter and drain and save 1/2 drippings. Add onions and 3 T water to the skillet cooking 4 minutes while scraping bits from skillet. Remove onions from skillet and set aside with chops. Return saved drippings to skillet and add carrots, beans, and 2 T water. Cook 2 minutes while stirring. Add rice and remaining water to the skillet heating to a boil. Arrange chops in single layer in skillet over rice. Lay sliced lemons over chops then layer again with the set aside cooked onions and smother with bbq sauce. Cover and bake at 375 for 20-30 minutes until liquid is absorbed.
