Zucchini Linguine

Ingredients

  • 2 zucchini, ends trimmed (each 8-inches long)
  • 1 Tbsp. olive oil
  • 2 tsp. minced fresh oregano
  • Salt and black pepper to taste

Preparation

Step 1

Julienne zucchini using a mandoline, a julienne peeler, or by hand.

Heat oil in a nonstick skillet over medium-high. Add zucchini and cook until softened, 2–3 minutes. Stir in oregano and season with salt and pepper.
