Ingredients

  • 2 C. semisweet chocolate chips
  • 6 T. butter, cubed
  • 3/4 ¾ tsp. mint extract
  • 2 C. crushed Oreos (about 20 cookies)
  • 2 C. chopped walnuts (opt)
  • 2 pkg cream cheese-8 oz each
  • 1/2 ½ C. sugar
  • 4 eggs
  • 1/4 ¼ C. flour
  • 2 T. cold brewed coffee

Step 1

In a microwave bowl, combine chocolate chips and butter. Microwave, uncovered, on high for 1-2 minutes or until melted. Add mint extract, stir until smooth. Stir in cookie crumbs and walnuts. Mixture will be very moist.

Set aside 2 C. for topping. Press rest onto the bottom of an ungreased 9x13. Bake at 350 for 10-12 minutes.
In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, betting well after each egg. Gradually add the flour and coffee. Beat until combined.

Spread over crust. Sprinkle with reserved crumbs. Bake for 25-27 minutes or until set. Cool on a wire rack.
