Peach Poppyseed Vinegarette

Pair with any lettuce or drizzle over pork

Ingredients

  • 3/4 cup frozen sliced peaches or mangoes thawed
  • 3 tbsp peach preserves
  • 2 tbps plus 2 tsp of apple cider vinegar
  • 1/2 tsp dijon mustard
  • 1/2 tsp kosher salt

Preparation

Step 1

put into a food processor until smooth. With food processor running put 1/2 cup canola oil through food chute in a slow stream. Process until smooth. Put 1 1/2 tsp poppy seeds. Makes 1 1/4 cups
