Stuffed Peppers with Andouille Sausage

Ingredients
- 1 package (8 oz) jambalaya mix
- 4 sm peppers
- 3/4 lg fully cooked andouille sausage
- 1 jalapeno pepper, seeded and minced
- 1 can tomato juice
- hot sauce optional

Step 1
Prepare rice according to package. Cut peppers lengthwise. In lg skillet cook sausage over med heat til browned. Add jalapeno, cook 1 min more. Remove to paper towel and drain. Stir sausage mix into rice, spoon into pepper halves. Place in greased baking dish, pour tomato sauce over and around peppers. Bake, uncovered, 350 for 40-45 min. Serve with hot sauce if desired.
