Ingredients
- 2 tsp olive oil
- 1 5oz container refrigerated chopped onions
- 1 12oz bag refrigerated fresh apple slices
- 1 cup unsweetened apple juice
- 3/4 tsp salt
- 1/4 tsp black pepper
- 4 (1/4#) boneless center-cut pork loin chops, trimmed
Preparation
Step 1
To make the apple-onion saute, heat the oil in a large nonstick skillet over medium-high heat. Add the onions and cook, stirring frequently, until crisp-tender, 2-3 minutes. Add the apples and cook, stirring occasionally, unti they begin to brown, 4-5 minutes. Add the apple juice and bring to a boil. Cook until the mixture is slightly thickened, 3-4 minutes. Remove the skillet from the heat; stir in 1/4 tsp of the salt and 1/8 tsp of the pepper.
Sprinkle the pork with the remainilng salt and peper.
Spray a ridged grill pan with nonstick spray and set over medium-high heat. Add the pork and cook until thermometer inserted into chop registers 160, about 4 minutes on each side. Serve at once with the apple-onion saute.
