Roasted Butternut Squash

Ingredients

  • 1 (20oz) package peeled cut-up butternut squash
  • 2 Tbs maple syrup
  • 1 Tbs olive oil
  • 1 tsp curry powder
  • 3/4 tsp salt
  • 1/8 tsp cayenne

Preparation

Step 1

Preheat oven to 450. Spray a large baking sheet with nonstick spray.

Combine all the ingredients in a large bowl; toss well to coat. Place the squash mixture in one layer on the baking sheet.

Bake, stirring every 10 minutes, until the squash is tender, 23-25 minutes.
