Ingredients

  • 3 boneless skinless chicken breasts- halved
  • 2 limes
  • 1 C unsweetened coconut milk
  • 1 T soy sauce
  • 1/2 t red pepper
  • 1/2 C flaked coconut
  • 2 mangos peeled and chopped
  • lettuce leaves (optional)

Preparation

Step 1

Cut chicken into chunks and squeeze one of the limes (or about 2 T lime juice) Cut remaining lime into wedges. in large sauce pan combine coconut milk, lime juice, soy sauce, and red pepper. Add chicken chunks and bring to a boil. reduce heat and cook covered for 12-15 minutes until chicken is thoroughly cooked stirring occasionally. Remove from sauce pan pouring into a bowl add mangos and toss. serve over lettuce leaves if used.
