Ingredients

  • 1 slice prosciutto, minced
  • 5 Tblsp. olive oil
  • 1 clove garlic
  • 1/2 onion, minced
  • 1/4 cup diced celery
  • 2 basil leaves
  • 1/2 lb. plum tomatoes, peeled & diced
  • 2 lbs. white beans
  • 1 & 1/2 cups Ditalini Pasta
  • 1/2 cup grated Parmesan Cheese
  • Salt & Pepper to taste

Step 1

Cook beans according to package directions. Place prosciutto, onion & olive oil in large saucepan. Saute gently until garlic is golden. Discard garlic. Add tomatoes, celery and basil. Simmer, stirring occasionally for 8 to 10 minutes. Add beans and 3 quarts water. Cover and cook slowly for about 1 & 1/2 hours or until beans are very tender, adding more water if necessary. Season with salt and pepper. Add Ditalini Pasta and cook for 10 to 12 minutes, stirring occasionally. Serve sprinkled with cheese. Serves 6-8.
