Ingredients
- 6 boneless, skinless chicken breast halves (1/2 to 3/4 pounds)
- 1/2 teaspoon salt, divided
- 1 (16-ounce) can apricot halves, drained
- 1 tablespoon brown sugar
- 1/4 teaspoon cayenne pepper
- 1 ripe mango, peeled, pitted and diced
Preparation
Step 1
Preheat the broiler. Coat a large rimmed baking sheet with cooking spray.
Place chicken breasts flat on prepared baking sheet. Sprinkle with 1/4 teaspoon salt and broil for 12 to 15 minutes.
Meanwhile, in a blender, combine remaining ingredients except mango and blend on medium speed until a chunky puree forms.
In a small bowl, combine diced mango and the puree. Spoon mixture over the top of the chicken and broil for 8 to 10 more minutes, until chicken is cooked and no pink remains.
Note:
Mangoes are available almost year 'round now in your supermarket produce department, but if you can't get one, you can substitute two fresh peaches here and it'll still be a hit.
