Ingredients

  • 6 bacon strips, chopped
  • 1 med onion, thinly sliced
  • 1 garlic clove, minced
  • 1 c bread crumbs
  • 2 plum tomatoes, chopped
  • 1/4 c minced fresh parsley
  • 2 T olive oil
  • 1 T butter, melted
  • fish fillets = 30 oz
  • 2 T lemon juice
  • 1/4 t salt

Preparation

Step 1

In lg skillet cook bacon over med heat til partially cooked, add onion and garlic, cook for 10-15 min. Remove, stir in bread crumbs, tomatoes and parsley. Set aside. Spread oil and butter in baking dish, place fillets in pan. Drizzle with lemon juice and sprinkle with salt. Top with bread crumb mix. Bake, uncovered, 400 for 10-15 min.
