Best Stuffed Zucchini

For a change of pace, substitute your favorite barbecue sauce for the marinara

Ingredients

  • 4 medium zucchini
  • 1 # ground beef
  • 1/2 cup chopped onion
  • 3/4 cup marinara sauce or spaghetti sauce
  • 1 egg, beaten
  • 1/4 cup seasoned bread crumbs
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1-4oz can green chilies
  • 1 tsp Italian seasoning
  • 1 cup (4oz) shredded Monterey Jack cheese, divided
  • Additional marinara sauce or spaghetti sauce

Preparation

Step 1

Cut zucchini in half length-wise; cut a thin slice from the bottom of each with a sharp knife to allow zucchii to sit flat. Scoop out pulp, leaving 1/4 inch shells.

Place shells in an ungreased 3-qt microwave-safe dish. Cover and microwave on high for 3 minutes or until tender-crisp; drain and set aside.

Meanwhile, in a large skillet, cook beef and onion over medium heat unti meat is no longer pink; drain. Remove from the heat; stir in the marinara sauce, egg, bread crunbs, S&P, green chilies, Italian seasoning and 1/2 cup cheese.

Spoon about 1/4 cup into each shell. Sprinkle remaining cheese on top and bake in 375 oven for 30-45 minutes.

Serve with marinara or spaghetti sauce.
