Sweet summer corn is at its best right now. Eat it up, six different ways. FYI...if you want to use frozen corn instead, the conversion is 1 10-ounce package of frozen corn = 2 cups kernels = 4 ears fresh corn

Ingredients
- olive oil cooking spray
- 2 cups fresh corn
- 1/2 cup heavy cream
- 1/4 cup milk
- 2 eggs, beaten
- 3/4 cup grated cheddar
- salt, to taste

Preparation
Step 1
Preheat oven to 350°F. Mist a baking dish with cooking spray. Mix corn, heavy cream, milk, eggs, cheddar, and salt in a bowl. Pour into prepared dish. Set dish in a larger baking dish; pour 1 inch water into larger dish. Bake until center is just set, about 30 minutes.
