Ingredients

  • 1/2 cup coconut milk
  • 2 tablespoons lime juice
  • 1/2 teaspoons grated lime zest
  • 1 tablespoon fish sauce
  • a pinch of cayenne
  • salt, to taste
  • 6 cups mixed greens
  • 1 1/2 cups cooked fresh corn
  • 1/2 cup shredded carrot
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh mint
