Sweet summer corn is at its best right now. Eat it up, six different ways. FYI...if you want to use frozen corn instead, the conversion is 1 10-ounce package of frozen corn = 2 cups kernels = 4 ears fresh corn

    cup coconut milk

  • 2

    tablespoons lime juice

  • ½

    teaspoons grated lime zest

  • 1

    tablespoon fish sauce

  • a pinch of cayenne

  • salt, to taste

  • 6

    cups mixed greens

  • cups cooked fresh corn

  • ½

    cup shredded carrot

  • ½

    cup diced red bell pepper

  • ¼

    cup chopped fresh mint


Whisk coconut milk, lime juice, lime zest, fish sauce, cayenne, and salt. Toss with mixed greens, cooked corn, shredded carrot, red bell pepper, and mint.
