Ingredients
- 3 c. cooked elbow macaroni
- 3 c. cubed, cooked chicken
- 2 c. peaches, cubed & peeled
- 1 c. sliced celery
- 1 c. halved strawberries
- 1 (11 oz.) can mandarin oranges.
- drained 1 (8 oz.) can pineapple tidbits. drained
- 1 (8 oz.) can sliced water chestnuts, drained
- 1/2 c. chopped apple
- 1/2 c. golden raisins
- 1/2 c. chopped pecans
- 1 c. mayonnaise
- 1/4 c. orange juice
- 2 T.sugar
- 1/2 tsp. ground ginger
- 1/2 tsp. pepper
- Shredded lettuce
Preparation
Step 1
Combine first 11 ingredients. Mix mayonnaise, orange juice, sugar, ginger and pepper toss with fruit mix. Serve over shredded lettuce.
