Creamy Make Ahead Mashed Potatoes

Creamy mashed potatoes get even better when topped with a savory trio of cheese, onions and bacon. Plus, these potatoes offer make-ahead appeal. —JoAnn Koerkenmeier, Damiansville, Illinois
Ingredients
- 3 pounds potatoes (about 9 medium), peeled and cubed
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup butter, cubed
- 1/4 cup milk
- 1 1/2 teaspoons onion powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 6 bacon strips, chopped
- 1 cup (4 ounces) shredded cheddar cheese
- 3 green onions, chopped
Preparation
Step 1
Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain; mash potatoes with cream cheese, sour cream and butter. Stir in milk and seasonings.
In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain.
Transfer potato mixture to a greased 13-in. x 9-in. baking dish; sprinkle with cheese, onions and bacon. Cover and refrigerate until ready to use.
Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 40-50 minutes or until heated through. Yield: 10 servings.

So yummy!!! I don't even particularily love mashed potatoes, but I would definitely make these over and over again.
A serving takes up most of a day's calories, but they are worth it.
I made a few changes to this recipe and we loved it!! I halved the amounts called for the following.....cream cheese, sour cream, butter, milk, and the seasonings.

These potatoes are delicious, even if they are loaded with calories! I really like that they can be made the day before you need them. This recipe serves a crowd; I'd say more than 10 servings.
I've made these a couple of times already, and they are excellent. My kids love them. Thinking of making these today, for Easter. These are great for the holidays when you need to get a few menu items done ahead of time, and can just heat them through before serving. Love them!
I first made this recipe for our family owned and operated restaurant located in Kansas for our Christmas Party in 2011. Very good, I forgot the sour cream and didn't miss it. Used low fat milk, cheese and cream cheese and it was still great.
Served these for Christmas dinner yesterday and they were a HUGE hit! Loved being able to make these the day before, then heat before dinner. Added some extra cheese right into the potato mixture, too...yum!
Lots of whining last Easter when I said, "Sorry, no gravy." This recipe shut them up quick. So delicious it should be against the law!

HEARTY AND DELICIOUS!
Delicious! I cut the fat by using light cream cheese and sour cream and skim milk. Also skipped the onions.

These are easy and very, very good. You can prepare them a day ahead then pop in the oven when ready to cook. We will definitely keep them on the top 10 list in our house.
