large or 2 medium yellow onions, chopped
cloves garlic, pressed or finely chopped
cup red wine
cans tomato paste
cans of water for every can of tomato paste except the last can only fill ½
cup grated parmesan cheese
Heat Olive oil in a large pot...add onion and sautee until onion is transparent. Add garlic, Parsley, Basil and cook for 1 minute stirring then ad wine. Bring to simmer and cover and simmer for 10 minutes. Add tomato paste and water stirring until all lumps of paste are dissolved. Cooking on low heat bring to boil then turn to simmer and simmer for about 2-3 hours. If adding meatballs you can add after about 2 hours and then simmer with meatballs about 2 hours. Before serving add parmesan cheese and mix into sauce thoroughly.
