Ingredients
- 3/4 cups coconut milk
- 2 tablespoons tomato paste
- 1 clove garlic, minced
- 1 tablespoon ginger, grated
- Salt and pepper
- 2 bell peppers sliced
- 1 sweet onion sliced
- 3/4 pound gold potatoes
- 4 teaspoons curry powder
- 8 chicken drumsticks
- 1/4 cup basil and cilantro, mixed and chopped

Step 1
Whisk together the coconut milk, tomato paste, garlic, ginger, salt, and pepper in crock pot or slow cooker.
Add the bell peppers, onions, potatoes and mix to combine.
Rub the chicken legs with the curry and nestle in the pot with the veggies. Cook on low 6 to 8 hours or on high for 4 to 5 hours. Sprinkle basil and cilantro before serving.
