Ingredients
- 2 tablespoons butter
- 1/2 medium onion, diced
- 1 carrot, cut in strips
- 1/2 cup celery, sliced
- 1 can cream corn
- 1 can peas, drained
- 1/2 teaspoon salt
- pepper to taste
- 1/2 teaspoon thyme
- 1/8 teaspoon sage
- 2 cups chicken, COOKED and diced
- 2 cups mashed potatoes
- 1 egg yolk
Preparation
Step 1
In a saucepan, melt butter. Saute onion, carrot and celery til softened....about 3 minutes. Fold in cream corn, peas, chicken and seasonings.
Spoon into a casserole dish. Spread mashed potatoes on the top. Lightly beat egg with a little bit of water. Brush the egg yolk over the mashed potatoes.
Bake at 400* for 20 minutes or til hot and bubbly and the potatoes are lightly browned.
