Ingredients
- 1/2 cup sugar
- 1/2 cup white wine vinegar
- 1 teaspoon soy sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cucumbers, thinly sliced
- 2 celery ribs, thinly sliced
- 1 small onion, thinly sliced
- 1 cup fresh lump crabmeat, drained (see note)
- 4 tomatoes, sliced
Preparation
Step 1
Whisk together first 5 ingredients in a medium bowl. Add cucumbers and next 3 ingredients, and toss well. Serve over tomato slices.
Notes:
A 6-ounce can of drained crabmeat can be substituted for the fresh. To make the canned taste fresher, soak it in ice water for 10 minutes, drain, and pat dry.
