Chili Pepper Appetizer (Louise Michaelis)(Firmer consistency version)

Ingredients

  • 3 (4oz) cans green milk chili peppers or 1 - 10 oz can (they will be mild unless marked hot)
  • 2 cups grated sharp cheddar cheese
  • 2 eggs beaten well & lightly seasoned

Preparation

Step 1

In 8x8 pan, cover bottom with chopped chilies (cooked/roasted). Sprinkle with grated cheddar cheese. Pour beaten eggs over cheese & chilies. Bake at 350 for 45 minutes. Cut into 1 1/2 cubes. Serve on triscuits.

LOUISE NOTE: I did a combo deal & did 2 eggs and a Tbsp of milk. The last time I made it, I used 3 eggs and a Tbsp of milk and liked the consistency better. Either way it is good and so easy.
