- 1 spaghetti squash
- 2 cups chopped fresh broccoli
- 1 small onion, diced
- 2 minced garlic cloves
- 1 tbsp olive oil
- Marinara sauve for serving heated

Step 1
Preheat the oven to 375. Cut the squash in half. Scoop out the seeds to pulp. Place the squash, rind side up, in a glass baking dish filled with about 1/2 inch of water. Bake 40-45 minutes, or microwave the squash for 8-10 minutes per half on high. Let the squash stand for a few minutes after cooking. Separate strands with a fork. While squash is cooking, in medium frying pan set over medium-high heat, cook the broccoli, onion, garlic, and oil until vegetables are crisp-tender, stirring constantly, about 4 minutes. Add squash and heat thoroughly. Serve with marinara on top.
