Ingredients
- 4 tblsp olive oil
- 7 garlic cloves, minced
- 1 onion, chopped
- 2 lb ground beef
- 1/2 of a 5oz jar of small, pitted green olives with pimientos
- 1/2 cup mojo
- 1 tsp salt
- 1 tsp pepper
- 1 tsp ground cumin
- 16 oz can tomato sauce
- raisins - optional
Preparation
Step 1
Saute onions and garlic in 2 tblsp of the oil until onion is transparent. Put in small bowl and set aside. Brown ground beef in remaining 2 tblsp oil. Add the onions, garlic, olives, mojo, tomato sauce, salt, pepper and cumin.If you are adding raisins, throw in a small handful now. Simmer for at least 30 minutes and serve with black beans and white or yellow rice. This is one of those dishes that taste even better the next day.
