Ingredients

  • 4 tbsp unsalted butter, room temperature ++
  • 1 c flour ++
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • coarse salt
  • 3/4 c + 2 tbsp sugar
  • 1 lg egg
  • 1/2 c buttermilk
  • 2 ripe med plums thinly sliced

Step 1

Preheat oven 59 375
butter 8" ovenproof skillet or cake pan. Dust with flour, tapping out excess
Whisk together flour, baking powder, baking soda and 1/2 tsp salt. Beat butter and 3/4 c sugar with a mixer on medium speed until pale and fluffy. Beat in egg. Add flour mixture in 3 additions, alternating with buttermilk.
Pour batter into prepared skillet, and smooth top with offset spatula. Pan plums on top and sprinkle with remaining 2 tbsp sugar. Bake until golden brown and pick inserted into centre comes out clea. 35-40 minutes. Let cool slightly.
