Ingredients
- 1/2 cup shortening
- 1 cup mashed bananas
- 3 teaspoon baking powder
- 1 cup sugar
- 1 cup nuts
- 2 cup all-purpose flour
- 2 eggs
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
Preparation
Step 1
Cream shortening and sugar. Beat eggs until light and add bananas and lemon juice. Sift flour, baking powder, and salt together; mix quickly into banana mixture. Add nuts, if desired. Bake in greased loaf pan for 1 hour at 375 degrees.
A thin confectioners' sugar glaze can be added when cooled. Mix 1 cup confectioners' sugar and 1 tablespoon milk to start. Continue adding drops of milk to achieve correct consistency of glaze.
