Glazed Banana Loaf

If you love the flavor of bananas, this banana loaf will make your mouthwater. Topped with a vanilla glaze it makes a fabulous evening treat to go with your coffee or tea. I also like to make this as a gift for neighbours or friends. Wraps up perfectly in cellophane and ribbon! I'll share the recipe and a few tips with you here. Enjoy!
Ingredients
- 1/2 cup softened butter or marg.
- 1 cup sugar
- 2 eggs
- 3 medium ripe bananas
- 2 cups all purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- Chopped walnuts (optional)
Preparation
Step 1
Cream butter and sugar in large bowl. Beat in eggs with a fork one at a time. Blend in mashed bananas.
Measure in all dry ingredients before stirring. Flour, baking soda, powder, salt and then mix just until moistened. Put in walnuts if adding! Spread in a greased 9x5x3 loaf pan.
Bake in 350 F degree oven for about 1 hour. Check around 55 minutes so as not to over brown. Let stand for a few minutes then glaze.

GLAZE:
2 cups sifted icing sugar
2-3 Tablespoons warm water
1 Tablespoon vanilla extract
Spoon over loaf and smooth with the back of the spoon. Let the glaze drizzle down the sides of the loaf as this adds a nice look! Let cool and then slice.
