  • Sauce:

  • 1

    c. light coconut milk

  • 1/4

¼ c. soy sauce (I use low sodium)

    Tblsp. Fresh lime juice

  • 2-3

    cloves garlic (minced)

  • 2

    teasp. Ground coriander

  • 3

    Tblsp. Brown sugar

  • 2

    smaller pork tenderloins

Directions

- Butterfly pork tenderloins and pound into even ½ in thickness (note do not do this to salmon/fish fillets!) - marinate in ½ of the sauce for 1 hr (or ½ day) - BBQ the tenderloins - Cook and reduce remaining sauce, and use to serve over grilled meat (and suggestion below) Suggestion: Serve with stir-fried spinach/snow peas, and brown rice
