Grilled Asian Pork Tenderloin w/ Thai Peanut Sauce

Ingredients
- Sauce:
- 1 c. light coconut milk
- 1/2 ½ c. smooth peanut butter
- 1/4 ¼ c. soy sauce (I use low sodium)
- 3 Tblsp. Fresh lime juice
- 2-3 cloves garlic (minced)
- 2 teasp. Ground coriander
- 3 Tblsp. Brown sugar
- 2 smaller pork tenderloins

Preparation
Step 1
- Butterfly pork tenderloins and pound into even ½ in thickness (note do not do this to salmon/fish fillets!)
- marinate in ½ of the sauce for 1 hr (or ½ day)
- BBQ the tenderloins
- Cook and reduce remaining sauce, and use to serve over grilled meat (and suggestion below)
Suggestion:
Serve with stir-fried spinach/snow peas, and brown rice
