For those that don’t know, quinoa is a gluten free grain. Technically quinoa, like amaranth, is not a grain although it is generally treated as one. Quinoa is packed full of nutrition, having much higher levels of protein than are found in most other grains, including wheat and rice. It also has a balanced set of amino acids ideal for humans. Quinoa is one of the most complete protein sources available from a plant source. In addition to all of that, quinoa is gluten free, making it perfect for those on a celiac diet.
To cook quinoa in a rice cooker, simply treat it the same as you would rice. Add two parts water to one part quinoa, stir and close the rice cooker lid – unlike rice you can stir quinoa a few times while cooking to prevent burning in the bottom of the pan. When the cooker shuts off, the quinoa is done. You can also replace the water with chicken or vegetable broth for added flavor and get a little more creative adding spices, vegetables, meat, etc. This is a very quick and easy gluten free quinoa recipe.
