  • 7 ounces/package chocolate wafer cookie, crushed
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • 8 ounces semisweet chocolate, chopped
  • 6 ounces cream cheese, softened
  • 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 cups heavy cream, whipped
  • 1 square semisweet chocolate

Step 1

1. Chocolate Crumb Crust - Postition a rack in the middle of oven and preheat the oven to 50. Select 9 or 10 inch pie plate (preferably glass). Crush the wafers into fine crumbs: Break into pieces, place in a food processor fitted with the metal plade and process finely. Or place the wafers in a heavy duty plastick bag and crush them with a rolling pin. (You will have about 3 cups) In a mixing bowl combine the crumbs, sugar and butter and , using a fork, mix completely. Press the crumb mixture onto the bottom and sides of the plate. Bake for 5 minutes, let cool , cover and chill well before filling.

2. Frozen Chocolate Dream - Place the chocolate in a small heatproof bowl or the top pan of a double boiler. Set over a pan of gently simmering water but not touching the water. Stir until melted and smooth, then remove from the heat and cool to luckewarm. Combine the cream cheese, sugar, vanilla and milk in a bowl. Using an electric mixer set on medium speed, beat until thoroughly mixed. Using a rubber spatula, gently fold in the whipped cram and cooled chocolate, taking care not to deflate the mixture. Pour and scrape the mixture into the prepared ctust, smoothing the top with a rubber spatula. Cover with aluminum foil and freeze for at least 4 hours or overnight. Using a vegetable peeler, shave chocolate curls from the thick square of chocolate, if desired, and arrage on top.
