Skillet Chicken and Dumplings for One

Terrific meal to make for Jack! Keep the carrots in chunks just like the photo and serve in my similar white bowls - great presentation!

Ingredients

  • 3/4 cup milk
  • 1/2 cup frozen green peas and carrots
  • 1/2 cup cut-up cooked chicken
  • 1/2 can condensed cream of chicken soup
  • Dash of thyme, sage and celery salt to taste
  • 1/2 cup Original Bisquick mix
  • 1/4 cup milk
  • Paprika, if desired
  • Chopped parsley

Preparation

Step 1

Heat milk, the peas and carrots, chicken and soup to boiling in small skillet, stirring frequently.

Stir Bisquick mix and 1/6 cup milk until soft dough forms. Drop dough by about 4 spoonfuls onto chicken mixture (do not drop directly into liquid). Sprinkle with paprika.

Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer. Sprinkle parsley on top.
