  • 3 lbs organic chicken
  • 1 large lemon
  • 2 1/2 tbsps. olive oil or melted butter

Preparation

Step 1

Preheat oven to 400 degrees. Lightly grease a roasting pan and place a wire rack in the base of the pan. Rinse the chicken under cold running water including the cavity. Pat dry with paper towels. Season the cavity with sea salt and pepper. Prick the lemon all over with a fork and place inside the cavity. Rub the oil all over the outside of the chicken and season well. Roast the chicken for 45 minutes- 1 hour or until chicken is done.
